Creamy matcha ice cream – indulgence with depth and well-being
This homemade matcha ice cream delights with an intense, pleasantly tart green tea flavor that not only tastes delicious but is also good for body and mind. Matcha is rich in antioxidants, promotes concentration, and brings a natural freshness to any dessert. With just a few ingredients, this creamy treat can easily be prepared at home – with or without an ice cream maker.
Ingredients (for 4-6 servings):
- 10 g matcha powder
- 100 g sugar
- 30 ml hot water
- 300 ml milk
- 100 ml whipped cream

Sift the matcha powder through a fine tea strainer before use to avoid lumps.

- Make a matcha base
Place the sifted matcha powder and sugar in a bowl. Pour the hot water (approx. 80°C) over it and mix thoroughly with a milk frother until the powder has completely dissolved and no residue remains at the bottom. - Add milk and cream
Now pour the milk into the matcha-sugar mixture and stir well. Then add the whipped cream and mix again until a homogeneous liquid is formed. - Freeze
Using an ice cream maker: Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions until it reaches the desired consistency.
Without an ice cream maker: Pour the mixture into a shallow metal bowl or other freezer-safe container. Place it in the freezer and remove it two or three times over the next 4–5 hours to stir it with a fork or whisk. This prevents ice crystals from forming and ensures a creamy texture. Stir until smooth with a spoon or spatula before serving.
Tip:
Metal containers conduct cold particularly well and help the ice cream mixture to freeze evenly. Those who prefer it less sweet can easily reduce the amount of sugar or replace it with honey.
