Matcha cookies

Delicate matcha cookies – tender, buttery & green

These delicate matcha cookies are easy to make and bring color and elegance to your coffee table with their subtle green tea flavor. Slightly crisp on the outside, beautifully crumbly on the inside – perfect with tea or as a small homemade gift.


Ingredients:

  • 70 g unsalted butter (softened, at room temperature)

  • 50 g sugar

  • 1 pinch of salt

  • 1 egg yolk

  • 100 g wheat flour

  • ½ tsp baking powder

  • 1 tbsp matcha powder


Preparation:

  1. Cream the softened butter with the sugar and a pinch of salt in a bowl.

  2. Add the egg yolk and stir well.

  3. Sift the matcha powder into the butter and egg mixture and stir everything evenly until no lumps are visible.

  4. Mix the flour and baking powder in a separate bowl and sift them into the mixture as well.

  5. Knead everything together to form a smooth dough. If the dough is too soft, refrigerate it for about 30 minutes.

  6. Preheat oven to 170 °C (top/bottom heat).

  7. Roll out the dough on a floured surface to a thickness of about 5 mm and cut out cookies using cookie cutters.

  8. Place on a baking sheet lined with baking paper and bake for 10-12 minutes – the edges should turn a very light golden brown.

  9. Let it cool down – and enjoy!


Tip:
You can easily adjust the amount of matcha to your taste. Half a tablespoon is enough for a milder flavor. The cookies can also be beautifully decorated with white chocolate.
